Elio Sandri is impossible to describe in a post, the best way to get to know him is visiting him or through his wines but here’s a few random info:
– he would not be making wine anywhere else, he thinks literally living on top of the winery has a key role
– his large casks are riddled with formulas and symbols that he draws with white chalk as part of his winemaking and explaining his philosophy to people
– his wines can stay open for months without getting spoiled (get that Coravin!). It’s not magic but winemaking.
The wines:
His Langhe Nebbiolo is one of the best of its category in Langhe, the eastern exposure combined with a submerged cap maceration gives it great elegance and ageing potential. The Dolcetto vineyard is surrounded by a forest and it was planted in 1970: the wine is supple and extremely classic.
